The Ritual
How to brew it
Bring fresh water to a rolling boil and warm the pot. Steep one teaspoon of whole leaf per cup for 4–5 minutes over the samovar until the brew runs deep red — the concentrated dam. Pour a measure into the glass and top with hot water to taste. Serve with a sugar cube on the tongue, dates, or a wedge of citrus. Then, simply, stay.
